Why Direct Fire Roasting?

If coffee drinks were paintings, then coffee beans would be pigments. The scent and taste of coffee beans are determined by roasting methods.

Direct fire roasting is originated in Japan. Coffee with strong tastes and distinctive layers is favourable among Japanese people; this way of roasting makes the aroma of coffee beans more prominent than the ordinary one. During the roasting process, there is direct contact between the beans and the flame; the roaster has to manage the time and temperature with precision and accuracy as one degree Celcius/ second could change the flavour of the beans. To ensure every single bean is evenly heated, only a very small number of beans can be processed each time, and this is what makes direct fire roasting rare in the industry.

甚麼是AICA 澳洲國際烘豆大賽？

舉辦澳大利亞國際咖啡烘焙賽的Australian International Coffee Awards七個年頭裡，冠軍這個名詞不是年年都有，一個並非只有分數高就可以得到冠軍的比賽，更多是能否達到來自各國共41位評委味蕾所認同的味道，如果都沒有，那這個冠軍名額在當年就只能從缺。

全球超過16個國家，172個參賽廠商和咖啡館總計超過800件參賽作品，在嚴格的考核評鑑下僅頒發了291枚包含金牌15面，銀牌92面，銅牌184面，而來自台灣的我們，拿下2020年國際烘焙賽總冠軍Champion International Roaster 及冠軍義式咖啡、冠軍奶咖啡，為本屆國際賽三冠王得主。
